Each guest uses a two-sided marker to establish the pace of their meal. The green side signals the waiters to bring out skewers of sizzling “coal-roasted” meats to carve them directly onto your plate. The red side tells the waiter to stop bringing meats to your table, either to pace yourself or because you are satisfied.
